One of the first resources I used for vegan cooking last year was The Easy Vegan on YouTube. When I’m feeling lazy, I’ll sometimes buy vegan bacon in shops which all have their own kind of flavour/look, and I use them all in different ways. The Easy Vegan’s recipe for tofu bacon is an amazing way to flavour tofu, and my favourite way to serve it is on a toasted sandwich with some ketchup. I tend to cut some thin slices as well as the size E.V. recommends, as my better half loves really crispy pieces which are most like how he used to eat bacon before deciding to go vegan.

I press my block of tofu in a basic screw tofu press, then slice it. When I freeze the pieces I separate them with bits of baking paper so they aren’t touching. To defrost, I leave them out or in the fridge. After they’ve thawed, I gently press them in a tea towel then soak them in a bowl with all the ingredients.
