Leek & Potato Soup

Simple and delicious root vegetable soup.

Ingredients

  • 2 leeks
  • 5 potatoes
  • 1 red onion
  • 2 vegetable stock cubes
  • water

Method

  1. Grab a small- medium sized pot and fill 2-3rds with water and set on heat
  2. Add your stock an wait for it to dissolve
  3. Chop your leeks into small pieces and add to pot
    (I cut them in half, and then half again, before chopping down the length)
  4. Skin and then chop your potatoes into small cubes and add to the pot
  5. Dice your onion into small pieces and then add to the pot
  6. Season with salt and pepper and leave to cook on a low-medium heat
