Simple and delicious root vegetable soup.
Ingredients
- 2 leeks
- 5 potatoes
- 1 red onion
- 2 vegetable stock cubes
- water
Method
- Grab a small- medium sized pot and fill 2-3rds with water and set on heat
- Add your stock an wait for it to dissolve
- Chop your leeks into small pieces and add to pot
(I cut them in half, and then half again, before chopping down the length) - Skin and then chop your potatoes into small cubes and add to the pot
- Dice your onion into small pieces and then add to the pot
- Season with salt and pepper and leave to cook on a low-medium heat
