Banana Pancakes

I love these pancakes! More than the plain ones I used to make. These are so soft and delicious, and have all the banana goodness within them, I haven’t bothered to try another vegan recipe for pancakes.

Ingredients:

  • 156g self raising flour
  • 2 tablespoons of caster sugar
  • 1 teaspoon of baking powder
  • pinch of salt
  • cinnamon (as much as you like! I use about 2 teaspoons)
  • 1 large ripe banana (mashed with a fork)
  • 1 tablespoon of coconut oil (and more for frying)
  • 180ml soy milk (or another alternative)
  • 1 teaspoon of vanilla extract (optional)

Method:

  1. Grab a medium sized bowl and add the flour, sugar, baking powder, salt, and cinnamon to it and combine.
  2. Mash your banana into a small bowl using a fork until it is a mushy, lumpy, then add you coconut oil to the banana. Mix these together then add to your dry ingredients.
  3. Add your vanilla essence, and then your soy milk, bit at a time, while mixing your batter until you have desired consistency. (A thick batter that runs smoothly.)
  4. Heat a pan on medium, and grease with coconut oil.
  5. Spoon your batter onto the pan using a large spoon, ensuring pancakes are separate.
  6. When they begin to dry at edges and bubble on top (you can peek at edges by pulling them up with spatula to see if one side is cooked) flip over onto the other side.
  7. Once ready, serve with a sprinkle of icing sugar!
    Some good toppings: berries, banana, maple syrup 🙂
