Pecan Butter

Super easy and minimal ingredient nut butter! Sweet and plain and simple. I always team it with fruit,
be it a smoothie or on toast and pancakes, topped with fresh fruit. Delicious!

Ingredients:

  • 300g of pecans (partially roasted)
  • 1 tablespoon of icing sugar (to flavour)
  • 1 teaspoon of cinnamon

Method:

  1. Lay pecans out on an oven tray covered in foil
  2. Place in oven and set 200’c for 5 minutes, until they are warm and you can smell them! Be very careful not to overheat them
  3. Once out the oven, leave to cook before blending
  4. Once cooled, place in a food processor and blend the pecans
  5. Take intervals to stop and push pecans down
  6. Keep dry blending until the pecans turn into a smooth butter (it will take a while but it works!)
  7. Add your icing sugar and cinnamon to flavour and blend again
  8. Store in a jar in the fridge and spread on toast, pancakes, sandwiches, fruit dipping…
    You can also mix in some cocoa powder if you love your chocolate 🙂
