Super easy and minimal ingredient nut butter! Sweet and plain and simple. I always team it with fruit,
be it a smoothie or on toast and pancakes, topped with fresh fruit. Delicious!
Ingredients:
- 300g of pecans (partially roasted)
- 1 tablespoon of icing sugar (to flavour)
- 1 teaspoon of cinnamon
Method:
- Lay pecans out on an oven tray covered in foil
- Place in oven and set 200’c for 5 minutes, until they are warm and you can smell them! Be very careful not to overheat them
- Once out the oven, leave to cook before blending
- Once cooled, place in a food processor and blend the pecans
- Take intervals to stop and push pecans down
- Keep dry blending until the pecans turn into a smooth butter (it will take a while but it works!)
- Add your icing sugar and cinnamon to flavour and blend again
- Store in a jar in the fridge and spread on toast, pancakes, sandwiches, fruit dipping…
You can also mix in some cocoa powder if you love your chocolate 🙂
